    The Scoville scale measures the "hotness," or more correctly the piquancy, of chili peppers. The number of Scoville heat units (SHU) indicates the amount of capsaicin present (capsaicin is a chemical compound present in the fruits of the Capsicum genus). Named after its creator, American chemist Wilbur Scoville.
